{Food Fix} Leftover Lunches are the Best

Yesterday's lunch was the BEST.  Anytime, I get to eat leftover dinner for lunch it always tastes amazing, and always beats a sandwich.

A few nights ago, the Hubs made asparagus and parm stuffed chicken breasts and the following night he made red beans and cornbread.  I made some cabbage to go with.

I made the cabbage by first sauteing some onion, garlic and carrots in a touch of canola oil with pepper.
After a few minutes I added a whole head of chopped cabbage, seasoning salt to taste, and one can of chicken stock.
covered and simmered, mixing occasionally, until the cabbage was tender and the chicken stock reduced.
The hubs made the beans.  I don't know the step by step directions but I do know, used onions, celery, seasonings, bay leaf and a smoked turkey leg.
Not sure what else, but they were the bomb and even better the next day.
The chicken breast was stuffed with parmesan cheese and asparagus spears.  Seasoned to taste with fresh herbs from our garden and baked. Then topped with toasted pine nuts.


Such a good lunch.  And reasonably healthy.

Wish I had more for today.

{Food Fix} Leftovers

You know I love me some Indian cuisine.
Last night I made curry potatoes with chick peas and tandoori chicken.
So for lunch today, I ate the leftovers.



OMG, it was delish.
Even better the next day!

{Food Fix} Amy's Mexican Tamale Pie


I like having quick and easy options in my freezer for those days when I don't have time to fix and entire meal, or when I'm just being plain lazy.
So,
when I found this little box in the freezer section of my grocery store, I had to buy it.
I've been a fan of Amy's products for a while now, (esp. the soups) so I figured this couldn't be too bad.




Check out the nutrionals, pretty impressive for a frozen product.

I like the sauce bubbling and oozing out.

This was delish.  The filling was flavorful, healthy and filling.
I'll be buying it again, for sure.

{Food Fix} Pita Pizza Pocket

You know I love my pita pizzas.
For lunch yesterday, I was down to my last pita half so I decided to put my pizza toppings inside the pocket making a pita pizza pocket.
First I toasted the pita, filled it with pizza sauce, mozzarella cheese and turkey pepperoni, then warmed in the microwave until the cheese was melted.
Just as delish as my good ol' original.

Half an apple and lunch was complete.

Food Find

Morning Star Farms Buffalo Chik'n Wings.



I enjoy most of the Morning Star Farms products, so I was excited about these.

And just as I anticipated, these were great. I followed the oven instructions and they came out crispy on the outside and moist on the inside. The flavor was good. Spicy as a buffalo wing should be. My only complaint is that they resembled less of a chicken wing and more of a chicken nugget. I thing they should be called Buffalo Chik'n Nuggets, not wings.




I paired my wings, disquised as nuggets, with a baked sweet potato for a quick and easy lunch.

Wednesday's B & L and Prego Update

I started my morning with a great breakfast. Scrambled egg, piece of chedda, 2 pieces of Sara Lee's 45 cal whole wheat bread (one with Mum's homemade blackberry jam) some cantelope slices and a cup of that good stuff.


Breakfast held me over until about 12:30 and that's when I went in search of some lunch. I bought this box of Channa Masala (curry chick peas) a few weeks ago and thought it was time to give it a try.

I also heated up some TJ's Veggie Samosas.

To round it all out, I chopped up some mushrooms and some carrots. I'm a dipper, so I had some rf ranch for the veggies and sweet chili sauce for the samosas.


The Channa Masala was really good. If you like curry and like chick peas, you'll like this.

Pregnancy Update.

Today, I'm 23 weeks along. I have to stay I love Wednesdays because each one that comes and goes means another week done. They are like mini milestones.

My weight gain is definitely not what it was with Jaelyn. With him, I gained a whole lot, fast. This time, I did really well the first 4 months with a small gain of only 7 lbs, but this past month I gained an additional 10. Ouch. I havn't been eating as well as I would like to but, I'm slowly getting a hold of that. I also contribute my gain to not hitting my water aerobics classes as often as I was in the beginning, due to my schedule. But I've recommited and I'm also not gonna let a beautiful beautiful day pass me by without getting a brisk walk in.

The baby is doing well. He's moving lots, especially at night. lol.
We've settled on a first name, Avon.
The middle isn't set in stone yet but Emmanuel is the top runner.

Tuna.Sammy

Happy St. Patrick's Day!!!

I didn't have anything green to wear, but I made sure Jaelyn wore green to school. His teacher gave me a green shamrock sticker to wear, so I'm free from any pinching.

Last year, I enjoyed a little sippy sip of some Bailey's Irish Cream, but I can't do that this year, so I guess I'll have to celebrate over a green salad for dinner.

Today's lunch was another delicious tuna sammy. They say, pregnant woman need to watch the amount of tuna and other seafoods eaten b/c of the mercury, so I have been conscious about that, but let me tell you, if I could, I would have a tuna salad for lunch everyday. So good.

With my sammy, I had some cut up veggies. Last night, I took the time to cut up some veggies so they would be readily available for me to snack on. This is something I used to do all the time, but recently I have been slacking. I really need to make this a priority again, for me it really does make a difference in my snacking choices.

Backwards post, but oh well.

Last night The Hubs and I went to see Martin Lawrence do stand up. Hilarious, dirty and raunchy, but hilarious.
Finding an outfit to wear that made me still feel cute, not fat, and cover the 18 week prego belly was a challenge. But somehow I managed.
Here I am with J before hitting the door to leave.

Yesterdays lunch couldn't have been easier.

Actually, I've really been enjoying this soup. I've been taking it to work for dinner.

Breakfast was really good. An egg white scramble with a whole wheat english muffin and some turkey bacon.

Yesterday, I also had a snack of some sliced pears.

While at my parents' in BC, my camera battery died and I didn't have my charger so I only managed to get a pic of one meal. Mum made me a sammy and some green tea.
My Mum is a great cook, and even when she just whips up a quick sammy, it always seems to taste so good. I guess it's that mothers touch.

On Sunday, my Dad was making his delish curry chicken with chick peas and potatoes. This is one of my fav things he makes. He is an amazing cook. He actually managed a restaurant kitchen back in the day, so can make just about anything. But this is one of his original recipes and it is the best.

Jaelyn and I didn't stay for dinner, so Pops hooked me up with some take out to bring home. I couldn't wait to get home and dig in.

This mix of curry chicken can be eaten over rice, but we usually eat it in a wrap; traditionally a roti skin.
I like mine spicy so I add some hot sauce before wrapping.

Tuna

Tuna Sandwich for lunch. So good.
I don't know what it is about a great tuna sandwich, but they make me happy.
I mix mine with rf mayo, s&p, chopped onions and pickles.





I added some tomatoes and cheddar to take it up a notch.

I got my thin crust veggie pizza last night. Oh my, it was so good. The crust was really thin and crispy. As you see, along side I had a salad with a drizzle of ranch.


For breakyfast this morning, after my aerobic workout, I had a yogurt mix.
FF vanilla yogurt, apple chunks, a few Honey Bunnies and some Puffins.
Creamy and crunchy, sweet and delish.

As if last night's pizza wasn't enough. I had another one for lunch. This one, I made myself with a mini pizza crust, sauce, mushrooms, turkey pep. and mozzarella cheese.
Yum. I feel like I could eat pizza everyday.
I also finished off my big bowl of salad, but didn't get a pic.
Now, I have a sweet tooth.
Hmm?

B & L

Breakfast & Lunch

I did an easy workout today at the Y. My first workout of the New Year but most definitely not the last. I plan on getting back on my schedule of hitting the gym while Jaelyn is at school.
Since I haven't actually hit the gym lately, (oh and because of the pregers thing) I wanted to take it easy. I did a 20 min brisk walk around the track and did another 15 mins on the elliptical.
I got that feeling of accomplishment that makes me feel so good.


After getting home, I had a great breakyfast of turkey bacon, 1 egg, a toasted whole wheat pita and a mandarin orange.
Peppermint tea.
(Funny thing, I haven't wanted any coffee in the last week or so, just tea. The peppermint seems to ease my nausea)



For lunch I had a Smart Ones pasta dinner.
I admit, I like a TV dinner. This is one of my faves.


I had this salad prepared to eat with my pasta but, after eating the pasta I felt too full. I had to wait about an hour to get the salad down.
But looking at this picture, makes me want another salad.
The Hubs went out to snatch up a pizza, I requested a thin crust veggie, maybe I'll have another salad with my slice.

Soup and Salad

I made another big pot of Spinach & Lentil Soup. It is so delish, you can find the recipe here.
It's really really easy to make.
I made a big pot so I have plenty to last me for a few days.



Along side my soup I had a bowl of salad.
I haven't had a homemade salad in a while. When it's cold outside I normally don't crave salads. I usually prefer to have something warm and hearty. But I buckled down and made a big salad. Big enough to last me a few days. I'm glad I did because it was really good and long over due. Can't wait to have another one with dinner tonight.
Actually, now that I've had this salad, I've been craving more:

Buffalo Chicken Salad
Bacon Ranch

Good Eats Today


Breakfast:

Lunch:
Brussel Sprouts
Homemade pizza pocket made with a Flatout Wrap, pizza sauce, turkey pepperoni and mozza.

Dinner:
TJ's veggie samosa's (sweet chili sauce for dipping) and curry couscous with raisins.

Food Food Food

Who doesn't love a bowl of hot soup on a cold day? I know I do. This tomato soup was more that delish.

Instead of the traditional grilled cheese sandwich, I opted for a slice of cheddar inside a toasted whole wheat pita. Perfect for dipping.

I've been having a lot of quick fix meals lately, havn't done a whole lot of cooking. Here is a Lean Cuisine Pasta Primavera with a side of brussel sprouts.

I've been really craving eggs latley. So for breaky fast one morn I had 1 whole & 1 egg white, over medium, with a toasted pita. Have you ever toasted your pita? It's really good. I keep my pita's in the fridge, but don't like to eat them cold, so I pop them in the toaster. They come out a little crispy around the edges but warm and soft in the middle.

More sprouts. I've been on a serious brussel sprout kick. This time they were paired with a Lean Cuisine chicken and garlic pizza.

I've been trying to avoid a cold lately, and gulping one of these down every other day has been helping.

Thomas' Light English Muffin with PB. One of my fave snacks ever.

I eat a banana just about everyday. Either with breakyfast or on the go.
Juicy Orange. Another fruit I've been having just about everyday.

Of course Oatmeal had to make an appearance. Love my oats, esp. on a cold day.


That was just a quick run down of some of my food choices lately.
