Baked Sweet Potatoes
I love sweet potatoes! ~ sweet potato fries, pie and of course covered in butter, sugar, cinnamon and mini marshmallows!!
Of course I don't eat them like that very often, I'd have and even bigger bubble butt than I already do.
So another way I like to have them is simply baked plain with a touch of salt.
I buy the biggest ones I can find, cut them into halfs or thirds and bake them covered with foil at 400 for about 1 hour.
I like to make enough to last me a couple of meals.

I like to eat them as a side to a main dish or just by themselves. Sometimes, I sprinkle a little cinnamon, or a drizzle of honey or agave nectar.
And since I bake a few at a time, I refridgerate the remainder and all I have to do the next day or so, is heat and eat.
Yum!

Holiday Binge
OK, well maybe not as drastic as a binge, but I did get my grub on over the holidays. I spent a week at my parents' house for Christmas and there was goodies galore. Of course I had to partake in the deliciousness but I did try to not go too overboard. I haven't weighed myself since I've been home. I don't want to know the damage done yet. My plan is to just get back on track and weigh myself in a week. That way, if I've gained tons, I won't know, therefore I won't get all depressed about the number.

Food Pics
So, I've really been rockin my healthy eats and baby weight loss. I jumped back on the wagon about 2 weeks ago with a goal to lose 30 pounds by my 30th birthday in April. So far I'm down about 8 pounds and I don't even feel deprived, so I must be doing something right.
On to the food...
Chicken ravioli with a veggie red sauce.
Garden salad with my must have; raisins.
A veggie burger, veggies and sweet potato chips.
Chickenless chicken burger and baked sweet potato.
Egg whites, turkey bacon and a toasted sammy thin.
Healthy Choice sweet and sour chicken.
Food Should Taste Good sweet potato chips.
Lentil soup with whole wheat bread spread with ICBINB.
Another TV dinner (don't judge, they're quick and I'm busy) This one was chicken pesto pasta something or other.
More salad.
I'm also proud to tell that I've been keeping a container of cut up veggies in the fridge for my snack attacks, I've successfully fought all my late night urges to kill the rocky road ice cream and I attended 3 christmas events that all had goodies galore, but I made wise food choices and did more socializing than eating.

I'm here, I'm good
Oh little blog of mine, I know I've neglected you. Please forgive me. I've been a busy little bee trying to split my attention between my 2 little princes, finals, maintaining the house and preparing for Christmas. But I do have good news. I've been on a roll with my healthy eating. I've even managed to loose some weight. yay!!
Here's some of my good eats as of late...
granola and raisins with ff vanilla yogurt.
A cuppa joe every morning helps keep me full between breaky and lunch.
