New Routine.

Exciting day for us. Jaelyn started his first day of Preschool today!! I think he was a bit nervous, I know I was. He has never gone to daycare so I didn't know how he would react to the structure of a classroom and the authority of a new person. But when he got home he was happy to tell me about his day and had a "Good First Day" note from his teacher.

So, now with J going to school, my plan is to drop him off in the mornings and head straight to the gym. Yup, that's what I did this morning and it worked out beautifully.


I did a good 45 mins on the treadmill then came home.

For breakfast I made a yogurt mix with nf vanilla yogurt, a small nectarine, puffin cereal, fiber one cereal and Bare Naked Fit granola.

After picking J up from school, we headed to the park. It is such a beautiful day today and I wanted to feel the sunshine.
By the time we got home, I was hungry for lunch. Keeping in mind it's Meatless Monday, I decided to try these Veggie Samosas.

I heated to according to the package instructions and while I waited for them sauteed up some veggies. Mushrooms, red bell pepper, onion, carrot and some spinach went in a pan with a bit of EVOO, seasoned with S&P, curry powder and smokey paprika. Just before removing it from the heat, I added some leftover brown rice and a splash of teriyaki sauce.


I ended up with a lot of food, but it was really good. The samosas had a great crispy wrap and were a bit spicy inside. I used sweet chili sauce for dipping which was the perfect flavor combo.

Meatless Monday.


Breaky Fast was quick and easy; Special K cereal with strawberries and Almond Breeze.
Lunch: Oroweat Sammy Thin with cheddar & swuiss, tomatoe slices and spinach. A side of TJ's Reduced Guilt Pita Chips and 1/2 a large navel orange. Delish, and filling.

Not sure what's for dinner, I'm not really in the mood to cook and I don't really have a taste for anything in particular. Hhmm?

Yesterdays Breakfast and Dinner

Yesterday was Meatless Monday so I started my day with a yummy yogurt, granola and white nectarine mix. I am really lovin these yogurt parfaits. I even had a dream about making one, but didn't have any fruit to put in it. Weird, I know.

I don't remember what I had for lunch yesterday. Did I have lunch? Brain Fart, I guess.


Anyways, dinner was a homemade pizza. I used a Pillsbury pizza dough and topped it with sauce, mozza cheese, mushroom, artichoke hearts, green bells, broccoli, onion and turkey pep for the boys.

I also made a salad with mixed greens, strawberries, blueberries, feta, candied pecans and raspberry vinaigrette.

What a great dinner. The pizza was so good, I had a second piece. The Pillsbury dough turned out really well. I just wish they made a whole wheat variety. And the salad, amazing.

Veggie Dinner


Last nights Meatless Mondays' dinner was sauteed veggies with a Laughing Cow light swiss wedge.

I chopped up:
mushrooms
broccoli
corn
green beans
onion
cabbage
and green bells
Tossed them all in a pan with EVOO and a touch of ICBINB light,
A couple shakes of teriyaki sauce and garlic powder followed.
Sauteed til veggies were tender but still had a bite.
Plated and added a LC wedge.

Turned out Delish.

Dinner and a Movie.

Last night The Hubs and I had a chill night on the couch. We rented a movie, Knowing starring Nicolas Cage, fixed some dinner, popped some corn and sipped some wine.

Since it was Meatless Monday for me, I went with a baked potato topped with a bit of ICBINB, cheddar, S&P, rf sour cream and salsa.
Paired with a side of steamed broccoli & carrots.
It was delish, my first baked potato with salsa and I loved it.

In our true fashion, we fell asleep before the movie ended, so I don't have a review. But, it was good enough to want to finish watching tonight.

Meatless Monday Week 3

Started my day with the perfect cuppa joe.

Followed by a bowl of Puffins w/ ff milk.
Jaelyn and I headed out for the early part of the day, when we returned I was starving. No literally, STARVING. We all know that's not a good thing, and if you didn't know, let this be a lesson learned.
While I waited for the eggs (for my lunchtime egg salad wrap) to boil, I dove into some sweet and juicy watermelon, but it wasn't satisfying my hunger fast enough, so I dipped into a bag of pretzels, nope still not satisfied, so I had a handful of Annie's honey bunnies. Where are the pictures you ask? I was starving, didn't have time to take any. Luckily I had already taken a pic of the watermelon when I cut it up. Bad, Bad Girl.

Finally, after waiting for what seemed like an eternity, I enjoyed a wrap filled with egg salad alongside some fresh tomatoes and sugar snap peas.

Egg Salad:
1 boiled whole egg
1 boiled egg white
Spoonful of rf mayo
Squirt of mustard
S&P
Wrapped with a ww tortilla and some lettuce.

Dinner: Veggies sauteed in EVOO, garlic and S&P with a splash of teriyaki sauce. Plated on a bed of brown rice.
Wow, sounds so simple but so good. Filling and satisfying.

Garlic toast, couldn't resist.

Meatless Mondy Week 2

Breakfast was a delish and fluffy blueberry pancake w/ sf syrup
A few more blueberries &
a hard boiled egg.

Lunch was leftover cheese ravioli and grilled zucchini. I remembered it was meatless monday just before eating that piece of sausage, so I gave it to the dog.

I had a bowl of fruit as a snack, and shortly after decided to have a handful of Annie's Honey Bunnies. (unpictured)

The Hubs was making chicken wings on the grill for dinner so I knew I had to think of something to keep my mind off the chicken.
My solution was a big summer salad. OMG, it was so good. I might have to make another today.
Mixed greens, strawberries, blueberries, rf feta, red onion, candied pecans and raspberry walnut vinaigrette.

I made the pecans myself; In a saucepan, I melted down approx. 1 tsp butter, approx 3 tbsp sugar, let melt down into a caramel, a splash of vanilla went in and then I mixed the pecans in until all were coated. To cool, lay the pecans out onto a sheet of parchment paper and separate. Add to salad just before serving.
*You could do this with walnuts too.

With this on my plate, I wasn't tempted once to have any chicken.

Oops, I almost forgot to mention, I had a small bowl of Half Baked FroYo for my sweet treat before bed.

Meatless Mondays

I've decided to go meatless on Mondays and possibly one more day of the week. I'm sure it wouldn't hurt to allow my body at least one day to digest all the meat I eat. Also, in a way, this will give me another focus and keep me even more conscious of my food choices. I guess it's like a mini challenge. Not challenging b/c I can't eat meat, (I went meatless for almost 2 years before) but challenging b/c I will have to think about what I eat even closer.

Yesterday was my first Meatless Monday. I didn't have much for breaky fast b/c I was travelling home from BC, but I did manage to get some coffee for the ride.

So, lunch was a veggie pita sammy.
RF cream cheese
Sliced tomatoes
Green Bells
Lettuce
1/2 slice of Cheddar


Along side, I had a sliced orange and a juicy plum.
Dinner last night was a veggie pita pizza. (Didn't occur to me that both meals included a pita until now)
I didn't get a pic b/c I was exhausted and starving after my sweaty 4 mile walk.
My snack yesterday was a big bowl of blackberries picked fresh from my MIL's backyard. Oh My, they were fat and sweet.
