{Food Fix} Red Velevet Waffles

Healthy, well-rounded breakfast??
Not even close.

Fluffy, moist and delicious?
You know it!

The Hubs had been wanting to try his hand at making these for a while now and he finally got the chance.

I don't know what recipe he used, which is probably good news for those of us trying to lose weight.

But I do know he also made cream cheese frosting with pecans.

Sure was delish.
But I won't be needing another one for a very long time.

{Food Fix} French Toast Remixed

I havn't mentioned this yet, but a couple of weeks ago I rejoined Weight Watchers.  This time I'm doing it exclusively online.  So far, So good.  I've managed to learn the new program and stick to it.
It's been a big boost in my weight lost efforts.  In December, just before Christmas, I gave myself a goal to lose 30 by my 30th, which is April 26th.  So far, I'm down 20 so, I'm happy.

Anyhoo, since I rejoined WW, I've been back to trying out new recipes with WW points in mind.

With that said, I tried some French Toast.

I used Cinnamon Raisin Bagel Thins, coated in egg whites.  Cooked in a pan with non stick spray, just as you would regular french toast.

I topped it with banana slices and a drizzle of maple syrup.  A side of scrambled egg whites and breaky was complete.

The verdict?
Not bad.  Of course with bagel thins you don't get that fluffy bread texture that you get when you make french toast with thick slices of bread but I really enjoyed it.  I will definitely make it again.

{Food Fix} My Oatmeal

I had a couple readers ask about how I make my oatmeal.  So I decided to do a full post on it.

I always make it the same way, but sometimes mix it up with different toppings and mix-ins.

So my base, goes like this.

I don't measure anything, just eyeball it.

These four ingredients are always in my oatmeal.
Nothing fancy, just your basic oatmeal, raisins, vanilla extract and cinnamon.

Of course, I start with boiling water then add the oatmeal on med. high heat.
Not too much or too little.
Just enough to mix into the water without allowing it to get too thick.
Followed by the raisins. I like lots of raisins.
At this point I usually turn the heat off.

Then I add the vanilla and cinnamon
Once the water is cooked down and absorbed into the oats, it's done.
I sweeten my oatmeal with either agave nectar or honey and I always top it with a splash of milk.
Yum, Yum, Yum!!

Some of my other favorite mix-ins are:

chocolate chips (when I'm being naughty)
walnuts or pecans
craisins
dried apricots
pb and jelly

{Food Fix} PB Oatmeal

Once again, I found the PB jar empty.
Of course that meant, I had to make some oatmeal in a jar.

A little agave nectar to sweeten it up a bit.

And some milk to cream it up a bit.
Delish!

{Food Fix} Pepperoni Omelete

Lately, I've been adding a couple of turkey peperoni slices to my eggs. It's a very quick alternative to another breakfast meat like bacon or sausage and of course tons better when it comes to calories and fat.
It also adds a little spicy bite.

{Egg white omelete with mozza and turkey peperoni}
Delish.

A couple of weeks ago, I got a package from Betty Crocker in the mail.

Inside were these goodies:
  • Bisquick
  • Snickerdoodle Cookie Mix
  • Pumpkin Spice Cookie Mix
  • Mississippi Mud Supreme Bars Mix

Thanks Betty!

So with the Bisquick, I made pancakes. My first Bisquick pancakes, and they were delish.

Oatmeal in a Jar

Yup, I did it again.

Another empty jar of PB = Oats in a jar.

PB and Co's Cinnamon Raisin Swirl is delish on toast and apples and just as delish with oatmeal.
I made my usual oatmeal, with cinnamon, vanilla extract and raisins, into the jar it went and topped it with honey.
Look who wanted in on the action... Henn Dogg.
I let him lick the jar afterwards, he was in heaven.

Oatmeal in a Different Jar.

So you've seen my oatmeal in a peanut butter jar. It was so delish, that I decided to do the same with an almost empty Nutella jar.

This time I cooked the oatmeal as I regularly do first, then put the hot oats in the jar.

If you like Nutella and oatmeal, you'll love this combination. Ridiculous!!

PB Oatmeal.

Two of my fave things!!! Oatmeal and Peanut Butter!!

I put some instant maple and brown sugar oatmeal in an almost empty PB jar. Added some boiling water and mixed.

Then I mixed in some honey and raisins.

Ready to eat!
Didn't disappoint at all. Loved it, down to the last spoonful.

Wednesday's B & L and Prego Update

I started my morning with a great breakfast. Scrambled egg, piece of chedda, 2 pieces of Sara Lee's 45 cal whole wheat bread (one with Mum's homemade blackberry jam) some cantelope slices and a cup of that good stuff.

Breakfast held me over until about 12:30 and that's when I went in search of some lunch. I bought this box of Channa Masala (curry chick peas) a few weeks ago and thought it was time to give it a try.

I also heated up some TJ's Veggie Samosas.

To round it all out, I chopped up some mushrooms and some carrots. I'm a dipper, so I had some rf ranch for the veggies and sweet chili sauce for the samosas.

The Channa Masala was really good. If you like curry and like chick peas, you'll like this.

Pregnancy Update.

Today, I'm 23 weeks along. I have to stay I love Wednesdays because each one that comes and goes means another week done. They are like mini milestones.

My weight gain is definitely not what it was with Jaelyn. With him, I gained a whole lot, fast. This time, I did really well the first 4 months with a small gain of only 7 lbs, but this past month I gained an additional 10. Ouch. I havn't been eating as well as I would like to but, I'm slowly getting a hold of that. I also contribute my gain to not hitting my water aerobics classes as often as I was in the beginning, due to my schedule. But I've recommited and I'm also not gonna let a beautiful beautiful day pass me by without getting a brisk walk in.

The baby is doing well. He's moving lots, especially at night. lol.
We've settled on a first name, Avon.
The middle isn't set in stone yet but Emmanuel is the top runner.

Breakfast goodness.

{Grapefruit}

{My fave oatmeal combo}

{Eggs on pita with fruit}

If' you are familiar with my blog, you know that I love breakfast. Even when I'm on a downward spiral of out-of-control eating, (which I'm currently trying to pull myself out of) I eat healthy, filling breakfasts.

Backwards post, but oh well.

Last night The Hubs and I went to see Martin Lawrence do stand up. Hilarious, dirty and raunchy, but hilarious.
Finding an outfit to wear that made me still feel cute, not fat, and cover the 18 week prego belly was a challenge. But somehow I managed.
Here I am with J before hitting the door to leave.

Yesterdays lunch couldn't have been easier.
A boring sammy,

And soup.
Actually, I've really been enjoying this soup. I've been taking it to work for dinner.

Breakfast was really good. An egg white scramble with a whole wheat english muffin and some turkey bacon.

Yesterday, I also had a snack of some sliced pears.

I got my thin crust veggie pizza last night. Oh my, it was so good. The crust was really thin and crispy. As you see, along side I had a salad with a drizzle of ranch.

For breakyfast this morning, after my aerobic workout, I had a yogurt mix.
FF vanilla yogurt, apple chunks, a few Honey Bunnies and some Puffins.
Creamy and crunchy, sweet and delish.

As if last night's pizza wasn't enough. I had another one for lunch. This one, I made myself with a mini pizza crust, sauce, mushrooms, turkey pep. and mozzarella cheese.
Yum. I feel like I could eat pizza everyday.
I also finished off my big bowl of salad, but didn't get a pic.
Now, I have a sweet tooth.
Hmm?

B & L

Breakfast & Lunch

I did an easy workout today at the Y. My first workout of the New Year but most definitely not the last. I plan on getting back on my schedule of hitting the gym while Jaelyn is at school.
Since I haven't actually hit the gym lately, (oh and because of the pregers thing) I wanted to take it easy. I did a 20 min brisk walk around the track and did another 15 mins on the elliptical.
I got that feeling of accomplishment that makes me feel so good.

After getting home, I had a great breakyfast of turkey bacon, 1 egg, a toasted whole wheat pita and a mandarin orange.
Peppermint tea.
(Funny thing, I haven't wanted any coffee in the last week or so, just tea. The peppermint seems to ease my nausea)

For lunch I had a Smart Ones pasta dinner.
I admit, I like a TV dinner. This is one of my faves.

I had this salad prepared to eat with my pasta but, after eating the pasta I felt too full. I had to wait about an hour to get the salad down.
But looking at this picture, makes me want another salad.
The Hubs went out to snatch up a pizza, I requested a thin crust veggie, maybe I'll have another salad with my slice.
