Sometimes...

I can throw together the best dish from the most random ingredients.

I wasn't in the mood for one of my go-to lunches and wanted to try something different. So I gathered some items and decided to see what I could come up with.

Here's what I decided on (oh, & rf sour cream unpictured),

I warmed the beans, pan fried the Chik'n Patty in a touch of EVOO and warmed the tortilla.

Layered it all on a tortilla with the sour cream and salsa.

Wrapped it up, and took a bite.

I must say it was delish and I will definately be adding this little dish of goodness to my lunch rotation.
