{Food Fix} Lite Meatball Sub

I had these frozen turkey meatballs in the freezer that needed to be used up so instead of the regular spaghetti I decided to try meatball subs.

First I sauteed them in a touch of EVOO with a chopped up onion and then added some marinara sauce.

I let them cook through and let the sauce reduce a bit.
I used a whole wheat bun that I hollowed out for 2 reason,
cut back on the carbs and cals and
give the meatballs a little well to sit in, so they wouldn't fall out as easily.

Topped with some RF shredded mozza cheese and toasted (open faced) in the oven until the cheese was melted.

With a sandwich this big, the perfect side was a simple salad.

I've never had a meatball sub before, but this was really good. 
I might just have to add it to the regular dinner rotation.
