It finally cooled down enough for me to actually turn on the stove and cook a real meal. On the menu last night was Indian Butter Chicken. I've made it before and posted about it here with a quick rundown of how to make it.
This time, I chopped up a bit of dried apricots to sprinkle on top. What a delish addition. And of course I plated it on a bed of brown rice and paired it with green beans.
