Quick Quesadillas

I made a quick bean and cheese quesailla for lunch the other day.
I coated a non-stick pan with a light cooking spray,
placed a ww tortilla down and spread it with some ff refried beans (that I had already heated up in the microwave and seasoned with taco seasoning), sprinkled with some cheese, folded over and let crisp and heat thru. Flipping once.
Some salsa and rf sour cream for dipping and Ta-Da.


Quick tip: For a crispier tortilla, after folding, place a (clean) heavy pot with water on top of the quesadilla and use as a press.

You could also try filling your quesadilla with grilled onions, peppers, zucchini, corn, chicken or steak even cooked ground beef or turkey.
