Chicken Salad

I had a leftover cooked chicken breast in the fridge, that I needed to do something with before it went bad. So I decided to make chicken salad with it.


I chopped the breast into small cubes, seasoned it with salt, pepper and a bit of chili powder.
Next I added:
1 green onion cut small
1 whole HB egg
1 HB egg white
1/2 carrot, shredded
1 tbsp RF sour cream
1 tsp RF mayo
1 tsp yellow mustard

Mixed it all together.
Makes 4 servings at 2 pts each.

I made a pita sandwich with it, added some sauted spinach and carrots. A great little lunch.
