A couple of weeks ago, I spotted this delicious looking grain salad over on Danica's Daily.
It looked so good, I had to try it for myself.
The package of mixed grains is from Trader Joe's, so I went and bought me some and whipped up the salad.
I followed Danica's recipe with a few exceptions.
I cooked the grains according to the package directions.
And once it was done cooking, I added,
1/2 jar chopped marinated artichokes
1/2 jar chopped sun dried tomatoes, drained and rinsed
1/4 cup of toasted almond slivers
A dash of S&P
Easy to make and easier to eat.
Delish hot or cold and was perfect to have in the fridge for a quick side dish with my lunches.
