This mornings breakfast was more exciting than last night dinner.

I made whole wheat pancakes. To the batter, I added chopped pecans and pumpkin pie spice.
I sliced up a huge peach to have with it.

Jaelyn enjoyed his pancakes with pumpkin butter instead of syrup. I think I've created a new Pumpkin Butter fan.

A perfect cuppa joe, and breakfast was complete.

I'm not %100 satisfied with my pancake mix. It's a store bought mix that calls for an egg and milk to be mixed in. They don't come out light or fluffy.

Does anyone have a suggestion for me to make them fluffy or a new store bought mix or recipe?
