Quick Quesidilla

Once again, I had a Mexican dish. I could probably eat Mexican food everyday.

This time I made a quick quesidilla.

I sandwiched between 2 corn tortillas, grilled onions and mushrooms, corn, a small amout of canadian bacon and grated cheddar cheese. (A bit of cheese on top of the bottom tortilla and then on top of the filling veggies to help hold it all together)

Warmed in a pan with a little EVOO until the cheese was melted and the tortillas were slightly browned. Flipping it over in the pan was a bit tricky, but I worked it out.

Dipped in salsa and washed down with a diet coke. Really felt like I was eating something naughty but it was healthy and filling.
