Curry Chicken and Sweet Potatoes

Sweet potatoes and curry is one of my favorite flavor combinations.
I've always loved sweet potatoes but never really cooked them. Since joining weight watchers they have become one of my favorite foods. Tonight I coated them in EVOO with a sprinkle of salt and baked them at 400 for about 30mins. I really like when the edges get almost burnt.

With my sweet potatoes I had curry chicken. I put 2 chicken breasts, 1 sliced onion, and a can of petite diced tomatoes, spiced up with garlic and curry paste in the slow cooker and let it do it's thing. Served with brown rice.
