Apple Pancake.

I had a leftover pancake from yesterday's breakfast so dressed it up with some apples.

I sliced up an apple, threw it in a pan with a bit of non-stick spray and a touch of Smart Balance. Spiced it up with some cinnamon and nutmeg. The trick to keeping the apples moist and softened just right is to add a little water and letting it evaporate. Repeat until your desired final product.
