{Sweet Fix} Pumpkin Pie

I've been craving some pumpkin pie lately and finally got a chance to make some. Here is the recipe I used. They turned out really well, but next time, I think I will use sweetened condensed milk instead of evaporated milk and sugar. I want to see what difference it makes.

Pumpkin Pie

Ingredients

1 (9 inch) unbaked deep dish pie crust
3/4 cup white sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
2 eggs
1 (15 ounce) can 100% pure pumpkin
1 (12 fluid ounce) can evaporated milk

Directions

Preheat oven to 425 degrees F.
Combine sugar, salt, cinnamon, ginger and cloves in small bowl. Beat eggs lightly in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk. Pour into pie shell.
Bake for 15 minutes. Reduce temperature to 350 degrees F.; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. (Do not freeze as this will cause the crust to separate from the filling.)

Yesterday, The Hubs and I finally got the chance to take the boys to the pumpkin patch. It's always so much fun. I love to pick out pumpkins. I don't like the perfect ones, I like them unique.

Don't the boys look cute in their costumes?

Last year after halloween, I found a ton of halloween decorations and costumes for 90% off the original price. So I paid less than $4 for both of these together.

I love a good deal!

Tonight, we're gonna carve our pumpkins and I think, I'm gonna make some pumpkin pie.

Day 28- A picture of you last year and now, how have you changed since then?

This is me 1 year ago. Just had my second baby boy. Happy and proud but also very anxious. Anxious about the days ahead as a Mother of two. Not knowing what to expect.

I had this unsettled feeling inside me. Holding my newborn, I just wanted to speed up time and pass the infancy stage. It sounds strange, but I just wanted to get to a point where he wasn't so fragile.

Sleep deprived, for sure.

This is me a couple weeks ago. Settled into our family routine. Got the Mother of 2 thing down, only to be shaken up by the upcoming arrival of a new baby. Still sleep deprived, but not only due to mommy duties but also because I'm now a college student for the second time.

At times I definitely still feel a bit anxious about what my future means, but for the most part I'm comfortable with whatever is to come.

{Political Fix} Just me and President Obama

Well, maybe not just the 2 of us, there were a couple other people.

This past Sunday I was lucky enough to get some tickets to see President Obama speak in Seattle. My wonderful cousin Q, was volunteering at the event and got some tickets, so she passed them on. The Hubs and I went along with my Aunt and another cousin.

The tickets were free, but we had amazing seats.

The event was great. He spoke about some current issues, his new American Jobs Act and of course the 2012 election.

Here we are excited to see our President.

This experience was amazing, much like his Inauguration, but much more intimate.

Being a witness to what is such a huge part of our history, knowing how far we've come as a country, and especially being a woman of color, this experience was beyond words. I only wish my Granny had lived long enough to see it.

I'm fortunate enough to say that I have a lot of things to be happy for. I've got a big close family, an amazing husbad, the best kids, supportive friends, great health, and lots of love.

One of the things I in my life that makes me happy is my dog Hennessy aka Henn Dogg aka Diggity.

I've had Hennessy for almost 7 years and he has been so much love from day one. I call him my first born. He can drive me crazy at times, but makes up for it when he's being sweet and wants to cuddle. There is no other dog like him.

I'm happy to say, that since the Hubs and I decided to follow a weekly dinner menu, we have managed to stay on track.... kinda.

{Family Fix} A Fall Day

I am so happy it is Friday!

This week has been a hectic one. I started classes on Monday so I've been trying to figure out the kinks in our schedules and to mix it up even more, Jaelyn has been home from school for over a week due to a teachers strike. Luckily, the strike ended and they went back to school today. Hooray!

So needless to say, I haven't really had a chance to blog about anything including keeping up with my 30 day challenge.

So while I have the chance, I'm going to play catch up.

Day 17- Someone you would want to switch lives with for one day and why

Naturally, my first thought was to pick someone rich and famous. Why wouldn't I want to experience a day of extreme wealth, pampering, glam, jet setting, signing autographs, posing for pics and just being fabulous?

But then after I really considered the question, I would prefer to switch lives with someone with more meaning to me.

So, I chose this guy,

Jaelyn - My first born, sweet little man.

I would love to see the world through his fresh 5 yr old eyes.
He is living in a world that is so different than when I was 5. Digital Technology, Sexuality on radio and TV, and National Security are all completely different now. I don't even think he has experienced any significant discrimination, like I had by the age of 5.

It would also be interesting to see how he sees me as his mom.

Day 18- Plans/dreams/goals you have

Hmm?
Besides, being a great wife and mother, my main current goal is to finish school. The plan is to finish the Diagnostic Sonography program within the next 3 years and begin my career once all the kiddies are in school.
As far as dreams, I have a bucket list, that seems to always get longer. A few things on my bucket list are travel (of course), write a children's book and learn a second language.

Day 19- Nicknames you have; why do you have them

My first nickname was Morapiggy.
From what I've been told, I got that nickname b/c I was a pretty, pink, chubby baby girl and I resembled Ms. Piggy from the Muppets.

The name stuck and since has been shortened to just Pig.

I have been reading blogs for years now. Not all of them were hosted by Blogger but when I decided to start by own blog, I chose Blogger after asking around about ease of use.
This little blog of mine has really laid a foundation for my healthy(ish) lifestyle. Having a place to share my triumphs as well as struggles has allowed me to release, learn, and move forward. Being a part of the blogging community has had nothing but a positive impact on my growth. The connections I've made, inspirational stories I've read, tips and tricks I've learned and feedback I've received all have made my journey to balance and healthy living more enjoyable.

Day 10- Songs you listen to when you are Happy, Sad, Bored, Hyped, Mad

I don't have a song for each, but these 3 are the ones that never change.

On a hot sunny day, when I'm cruising around town, I like to put on my big sunglasses, roll my windows down, feel the wind on my face and turn up some Bob Marley.
Waiting in Vain is one of my fave songs and just gets me in a good mood every time.

Mary J is one of my fave artists of all time. I have all her CD's and she has yet to disappoint me.
I like to listen to this song when I'm getting ready to party. There is something about the beat and the lyrics that get me hyped and feeling myself. If I'm really on a good one, I will even request it while I'm at the club and bust a move. Watch out now!

I don't have a specific song I listen to when I'm sad, but this next song definitely has a special meaning to me. I've experienced a lot of loss of loved ones and this song is the perfect expression of what a loss feels like.

Day 09- Something you’re proud of in the past few days

This little monster is learning to brush his teeth. Of course like most little monsters, he just wants to suck the sweet toothpaste off the brush.

J-Boog started kindergarten on the 1st. I think I was more nervous than he was.
He also learned to tie his shoes over the summer and he's been doing so well and getting better with each practice.

Because we had a shity summer my veggie garden got off to a late start. Finally, I've been able to pick some goods.
This is my latest batch of homegrown beauties.

Potty training has started with Mr. A. With the new baby on the way, my goal is to have him mostly trained by the time the baby arrives. I do not want to have to buy twice the amount of diapers or change twice the amount of poop.

{Food Fix} Nutella Oatmeal

Nutella is amazing. I love it, try not to buy it too often b/c I know once I remove the foil seal, it's game over. So needless to say, when I do have some Nutella in the house, I don't want to waste a lick.
The best way I know how to enjoy every last drop is to make oats in a jar.

I prepared my oatmeal as I normally do with vanilla extract, cinnamon and raisins. Once it was ready, I scooped the hot oatmeal into the jar and sweetened it with agave nectar then topped it with a splash of milk.

I hate to be predictable, but my kids have have had the biggest, most significant impact on my life. Before becoming a Mommy, I was a free bird. Those days are long over and have been replaced with my 2 little guys. I now have to consider them in everything I do. My schedule is only made after theirs have been finalized. The impact is not only physical, it's also very spiritual and emotional. Because of them I have experienced a love like no other, both my love for them and theirs for me. It really is indescribable. I love being a mother, always knew I would be one day. Although having kids is not always convenient, I wouldn't trade motherhood for the world. My kids have made me a better person. They have taught me patience and selflessness. They give me joy, make me laugh, and keep me so entertained. I love spending my days and nights with these two little guys and look forward to the fun to come when our new little one joins the fun.

She-Ra

Let me start by saying, I'm not really into superheroes. Not my thing. I chose She-Ra, because she is the sister of He-Man and my brother was a He-Man fan. And since I looked up to him so much when we were young, she became my favorite.

After high school graduation, my cousin Q, BF Liz and I all took a back packing trip through Europe.

Rome was one of the places we visited. Everything about this city was amazing.

Of course while we were there, we had to check out the Colosseum. Being there, inside this ancient amphitheater was one of the most memorable experiences of my life. Why? Simply because when I was in about the 3rd grade, I did a school project on The Roman Colosseum. At the time, I dreamed about one day seeing it for myself, but never in a million years thought I actually would.

So as I stood there, I remembered that dream from so many years before and realized it had come true.

Gotta get back there oneday.

Hunger Fix

When I started my blog back in March of 2009 I named it From My Kitchen. I was never really satisfied with that name, it was boring, unoriginal and narrow. Although I primarily blogged about food and my daily eats, not everything I blogged about came from my kitchen or even had anything to do with my kitchen.

After having my 2nd little guy, I realized I wanted to blog about not only food, but my life. I wanted to blog about the things that make me happy and satisfy a piece of me. That's when the name Hunger Fix came to me. I wanted to maintain my focus on food, but I also wanted to leave room for me to be able to blog about the important people in my life, the fun events I attend, my kids' milestones and more.

So, Hunger Fix - Satisfying all of Life's Little Hungers was born.

{Family and Food Fix} Kindergarten and Weekly Dinner Menu

We've been busy around here.

Lot's of stuff going on, but the most exciting is Jaelyn starting kindergarten.

He was a bit nervous but said his first day was lots of fun. He helped the teacher, made some friends and didn't want the day to end.

It's been bitter sweet for me because I love watching him grow and develope into himself, but I also miss my baby boy. The time flew by and I just want the next five years to not pass by so fast.

First Day of School

So, this pregnancy has gotten me wanting to eat everything I see.

I don't have a specific craving, basically, I want it all, sweet, sour, salty, savory, creamy, crunchy, hot, cold.... whatever, doesn't matter.

It makes me a bit nervous b/c I know how hard it is to lose the weight after the baby comes.

What I really need to do is focus finding and keeping my good health habits. For the last couple months, I have completely given in to every bad habit.

One thing the Hubs and I have decided to do is keep a weekly dinner menu. Our hope is that it will help us eat healthier, have a home cooked meal most nights of the week and maybe save some money.

This weeks dinner menu:

Wednesday - Beef Stew with Cornbread

Thursday - Individual Turkey Meatloaf w/ Mashed Potatoes & Green Beans

Friday - Rotisserie Chicken w/ Brown Rice, Gravy and Corn on the Cob

Saturday - Cheese Tortelini w/ Garlic Bread and Salad

Sunday - BBQ Chicken, and all the sides (Happy Labor Day)

Monday - Chinese Lettuce Wraps

Tuesday - Grilled Steak w/ Onions and Baked Potatoes

{Food Fix} Japanese Steak House

I love a good Japanese Steak House.

There are a few different Japanese restaurants here in my area. For the most part, they all serve the same dishes.

The kids love to watch the cook fire up the grill and play with his utensils.

With dinner, you get a cup of soup

and a small salad,

I think my fave part is the sauteed veggies. I love the onions, mushrooms and zucchini.

Fi-yah!

I ordered the shrimp and chicken

Sherbet is always offered after dinner.
So cold and refreshing after a great meal.

{Family Fix} Avon's Tye Dye Birthday Party

Over the weekend we celebrated Mr. A's first birthday with a Tye Dye party.

I can't believe my little man is a year old already.

I love to bake and since I made Jaelyn's 1st birthday cake, I decided to make Avon's too. But this cake is extra special...

We had the party at a local park here in Tacoma that had just been redesigned with a new play area and sprinkler park.

To keep with the Tye Dye theme, I had all the kiddies bring a plain white T to dye, so each of them went home with their own little creation.

Of course we had to get a family photo of the 4 of us because soon we will be a family of 5.

The Cake

What Tye Dye party is complete without a Tye Dye Cake?

Not this one.

So, I made one with the help of big brother J-Boogie.

We used 2 boxes of white cake mix and followed the prep directions but before pouring it into my cake pans, we separated the batter into 5 smaller bowls.

In each of the bowls we mixed in food coloring...

Next we poured equal amounts of each colored batter into 3 different cake pans, like so...

Once all the batter was poured, we used skewer sticks to swirl the colors into each other.

I baked the cake as directed by the box.

The final product was awesome and made for a cool surprise.

Jaelyn had is last soccer game today. It is pure comedy to watch 3-5 yr olds kicking the soccer ball around. Half the time, they don't know which direction to go and end up kicking a goal for the opposing team. Too cute.

He really seemed to enjoy playing and is already asking about next year.

Today is a good day,

my little man is turning 1.

He's a little tornado. Gets into everything and leaves a path of destruction behind.
He has 8 teeth, all of which he likes to use on Mommy's boobies when feeding. ouch.
He's been walking like a pro for a month, even tries to run.
He looks up to big brother J and loves to play with him
He loves to sing and dance.
He has been such a sweet addition to our family, I couldn't imagine life without him

In the last few weeks I've been to two great concerts.

The first was Janet Jackson in Montreal.

The tickets were a surprise from my cousin.

The show was a lot of fun.

The second was John Legend and Sade.

My beautiful Sissy bought both myself and her bestie tickets for our birthdays and our Mum a ticket for mothers day.

That concert was amazing!!!

Let me tell you, if you've never seen John Legend in concert, you are missing out. That man's voice is so incredible not to mention Sexy! He is by far the best vocalist I've seen in concert and I've been to a lot of great concerts.

Sade was the headliner and she put it down!!

I was in awe the entire time.

She really put on a production. The lighting, stage art, her performance and the band...

Beyond all my expectations.

She put so much thought, time and money into the whole show, I walked away feeling very appreciated as a fan.

The best concert I've ever been to.

Thanks Sissy, you're the best.

I'm sorry if you're getting bored with my re-cap posts of my trip, but I had such an amazing time and there was so much to share that I can't help myself.

{Travel Fix} Vaction Food No.2

The food adventure continues.

One day while everyone was napping, my Sis and I snuck off for a sweet and cold bite of ice cream.
It was so hot out there and this ice cream was just the ticket.

For the last 2 days of our trip The Hubs, Boys and I, headed back to New York.

Our quest to find the best slice of pizza was back in full force.

The Hubs found Patsy's Pizzeria in Harlem online. The rating for this place were great so we had to try it. I enjoyed it, but knew we could find better.

Mr. A killed his piece without a complaint.

The next slice we had was this cheese and ricotta from a place called Carve.
We decided to share a slice and I have to admit, after it was gobbled and gone, I was in love.
The crust was crispy and soft in all the right places. The sauce had flavor but not overpowering and the ricotta was warm and creamy the perfect contrast to the melty mozza.

This slice easily became my favorite!!
A+

We didn't do a lot of sweets while in NY, but the one sweet treat we couldn't deny was a slice of Cheesecake from Juniors.

One piece between the 3 of us didn't last long. So good.

Harlem NY has some amazing Soul Food.
Jacob Restaurant has an incredible buffet of traditional soul food dishes.

And this place was packed with people, which is only a good indication of how amazing the food is.

We decided to fill a take out container with small portions of our must haves,

greens, black eyed peas, yams, mac and cheese, fried chicken, short ribs, ox tails, baked chicken and curry potatoes.

My pregnancy cravings kicked in when I spotted the grapefruit slices on the salad bar so I got a few slices and Jaelyn wanted some banana pudding.

Everything tasted even better than expected. I will definitely be making a stop at Jacobs the next time I'm in Harlem.

On most blocks in, dare I say, "The Hood" in NY, you will find these carts, with woman selling icies.

You can choose a single flavor or combination of mango, cherry, coconut or rainbow.

Coco-Mango is my fave.

In the dog days of summer in NY, it's hard to walk by one of these carts and not order an icy.

More cheese pizza. And my 2nd runner up for the best. This slice came fresh out the oven at a place that was simply called 99cent Pizza.
The crust was perfect, the sauce was spread just right and the cheese was flavorful.
And let's be honest, the price was right!

Our last dinner was had in Little Italy. Being the food crazed folk that we are, we decided to check out two different restaurants.

The first was Benito One.

We ordered some bruschetta,

And Fettuccine Bolognese.

The sauce was lite and the noodles were fresh, the best.

We finished our Italian dinner at Giovanna's.

Where we shared a plate of Lasagna.

I love Italian food and these two restaurants didn't fail to deliver great food.

Our last morning in New York was spent back in Harlem were we went to the famous Sylvia's.

Another amazing soul food restaurant.

I ordered the chicken and waffles.

Jaelyn got hotcakes, bacon and eggs.

The Hubs ordered the whiting with grits and eggs.

He also ordered a kids meal of chicken, greens and mac & cheese "to go" for the flight home.

{Travel Fix} Vacation Food No. 1

For us, travel means lots of food. We love to taste the local food favorites everywhere we go. So of course being in NY it was all about the pizza.

I ate so many slices of pizza that I started to bleed sauce.

These were our first slices of the trip.
Just consider this picture "The Jump Off"

Once in Montreal my cousin Tamara, invited all of us to her house for a BBQ. It was delish.
She had some great salads including one that was Mango with a touch of habanero pepper, cilantro and garlic. It was so refreshing.

Of course while in Montreal, I had to get a poutine and a steamie.

If you're not familiar a poutine is french fries topped with gravy and cheese curds and a steamie is a hot dog on a steamed bun topped with mustard, cabbage and sometimes relish.

And no trip to Montreal is complete without a bite of a smoked meat sandwich.

We chose to have ours at the famous Dunn's.

Can you tell I enjoyed it?

Washed it down with a tall glass of lemon water.

French is the primary language of Quebec.

Another favorite of my family is The Curry House in Cote des Neige.

We had to have Jamaican Patties as an appie.

Flaky and delish.

as well as a plate of Stewed Chicken with Rice, mango, fried plantain and a salad.

Our next food adventure took us to my Pop's childhood favorite, New Systems.

Of course my camera battery died just as our food arrived.

But as a family we ordered a feast of pizza, poutine, baked chicken, sub sandwich and greek souvlaki.

We didn't really eat much breakfast food, mostly bagels and toast from our hotel. The one chance we did get out for breakfast we chose to dine at Tutti Frutti, just a block away from our room.

We ordered your typical breakfast favorites,

eggs, toast, waffles, pancakes, and breakfast potatoes.

It was a big spread and really good.

There is so much to see in Montreal. It's such a big beautiful city.

The Eaton Center mall had a recycling campaign going on.

In the center of the mall was this river made of upcycled/reused materials. If you look closely you can see the water is plastic bottles, butterflies from plastic hangers, flowers from pop cans, and lily pads from cardboard and styrofoam.

Going up the walls of the mall was a forest of trees made from cardboard boxes.

And more rivers made of water bottles complete with bubble wrap fish.

So cool.

{Travel Fix} Vacation Re-Cap No.1

We're home from our amazing trip to New York and Montreal.

I have so much I want to share with you all, so I'm going to break my Re-Cap up into several different posts.

Our first night was spent checking into our hotel, The Millenium Broadway, located in the heart of Times Square, and roaming the streets taking in the sights of downtown NY.

Everyone has a hustle in NY, the Naked Cowgirl is no exception.

The following morning, we hit the road for a 6 hour drive to Montreal, QU.
The drive was really pretty, lots of open spaces, green grass and blue skies.

After a short wait at the border,

We were welcomed into Quebec by this lovely sign.

We stayed at Hotel Visitel in downtown Montreal in an area called the Latin Quarter.

Once we settled into our room, we met up with the rest of the fam and hit the streets.

In the wee hours of the morning, our little family of 4 will be headed to the airport to bust out of this town.

Where are we going, you ask?

Only to 2 of the most exciting cities on this continent...

New York City

and

Montreal, Quebec

We will fly into NY, spend the night, then drive to Montreal where we will meet up with my Parents, Sissy, Niece, Aunt and Cousin. After spending 6 nights in Montreal, we'll head back to NY for another couple nights.

Of course traveling means eating lots of good local food. And I got my mind on a NY slice and some Montreal poutine.

I am more than excited.

The weather here in the Seattle area has been ~~shity~~ mild.

High 60's and low 70's. WTF?

Summer just forgot all about us.

So needless to say, we are ready for some fun in the sun.

I might get a chance to do a couple updates while I'm away, but if not, don't forget about me. I'll be back with lots of pictures.

{Creative Fix} Stop and Smell the Roses

Last week, my girl Melinda, invited me to a Floral Arrangement group she found on Meetup.com.
At first, I kind of laughed at her like, girl, you're turning into an old lady. But of course I was interested. I mean, I do love to craft.

The event was held on a sweet farm house. We were greeted by the host Julia, who runs a bridal floral business out of her house.
First thing on the agenda was for everyone to introduce themselves. And just in case you are wondering, the woman were all ages.

After the introductions, Julia did a quick demo and then it was time to get busy.

We were supplied with a vase and craft wire,

and of course the flowers.

Much to my surprise, there is a specific technique to arranging a flower bouquet.

Cross and Twist.

It took me a minute to get the hang of it.

But eventually, I ended up with something I was proud of.

Melinda liked hers so much, she wanted to eat it.

The final product.

We had a good time last night.

Met some friendly people,

Scratched our creative itch,

And went home with a beautiful bouquet of flowers.

{Food Fix} Mango Butter

During a recent trip to TJ's I spotted this Mango Butter.

I had to try it.

I mean the name itself says "You'll love me"

Last fall, I tried the Pumpkin Butter, you can read about it in this post.

I loved it and used it in so many ways, so of course I was expecting the same with this Mango Butter.

And just as I expected, it is delish too.

Here I tried it on an english muffin.

I've been hiding a secret.

Yup, this Mommy of 2 adorable boys, one of which hasn't even turned 1 year yet, has another one baking.

We always knew 3 was our number, we just didn't think the last 2 would be so close together. I was a bit shocked to find out I'm preggers b/c I'm still breastfeeding Avon and wasn't having a period. Which means I don't even know when this all happened.
I had an ultrasound a few weeks ago and it determined I was somewhere around 12 weeks, currently I'm 3 1/2 months along.

Saturday, I went to my nieces baby shower. I didn't take my camera, well actually I did, but then realized the battery was dead, so I left in it the car.

Luckily before I left Jaelyn and I had a little photo shoot in the backyard. He's been learning how to use the camera so I put him to work.

{Food Fix} Kids in the Kitchen

Rice Crispy treats are the perfect treat to make with a kid.
They're fast, little ingredients are needed, don't require any baking, and kiddos love them.

I've had this box of "Crisp Rice" in my cabinet for almost 2 months and finally got around to making some rice crispy treats with Jaelyn.

Jaelyn was a big help stirring the marshmallows.

And of course when it was all done, he got to nibble at the spoon.

(The best part in my opinion)

These treats don't last long in our house. Between Jaelyn and the Hubs, they go really fast. Which is fine with me, the less time they hang around, the less chances I have to dig in.

{Fitness Fix} Jaelyn's Track Meet

We signed Jaelyn up with a track team this summer to keep him busy.
This was his first year, so needless to say, it was quite cute to watch.

He's a pretty good runner. He's a little slow at the start because he is so busy watching the other runners take off. His last meet was on Wednesday and he got 3rd place in the 50 meter run. His best time of the season.

In addition to the 50 and 100 meter races, he also competed in the standing long jump.

And the softball throw.

The season was a quick 6 weeks, but he really enjoyed it.
And since we haven't really had much of a summer here in the Great Northwest, (rain, clouds, rain and more clouds) it was perfect for him to get out of the house, get some activity and meet some new friends.

Next up, Soccer.

{Food Fix} Leftover Lunches are the Best

Yesterday's lunch was the BEST. Anytime, I get to eat leftover dinner for lunch it always tastes amazing, and always beats a sandwich.

A few nights ago, the Hubs made asparagus and parm stuffed chicken breasts and the following night he made red beans and cornbread. I made some cabbage to go with.

I made the cabbage by first sauteing some onion, garlic and carrots in a touch of canola oil with pepper.
After a few minutes I added a whole head of chopped cabbage, seasoning salt to taste, and one can of chicken stock.
covered and simmered, mixing occasionally, until the cabbage was tender and the chicken stock reduced.

The hubs made the beans. I don't know the step by step directions but I do know, used onions, celery, seasonings, bay leaf and a smoked turkey leg.

Not sure what else, but they were the bomb and even better the next day.

The chicken breast was stuffed with parmesan cheese and asparagus spears. Seasoned to taste with fresh herbs from our garden and baked. Then topped with toasted pine nuts.

Such a good lunch. And reasonably healthy.

Wish I had more for today.

{Food Fix} TJ's Harvest Grain Mix

A couple of weeks ago, I spotted this delicious looking grain salad over on Danica's Daily.
It looked so good, I had to try it for myself.

The package of mixed grains is from Trader Joe's, so I went and bought me some and whipped up the salad.

I followed Danica's recipe with a few exceptions.

I cooked the grains according to the package directions.
And once it was done cooking, I added,

1/2 jar chopped marinated artichokes
1/2 jar chopped sun dried tomatoes, drained and rinsed
1/4 cup of toasted almond slivers
A dash of S&P

Easy to make and easier to eat.

Delish hot or cold and was perfect to have in the fridge for a quick side dish with my lunches.

Our little family of 4 decided to spend some time together at the zoo.

Jaelyn loves animals, esp. penguins, so he had a blast.

The penguins came super duper close to the gate so we were able to get a really good look at them.

Jaelyn was on cloud nine.

Of course he didn't want to leave the exhibit for like 20 mins.

The penguins really are too cute.

Sunday the Hubs went fishing and I took the boys to a parade.
I love parades. I remember going to parades in the summertime when I was a little girl visiting my Granny. So much excitment.
These days when I go to parades I'm extra excited because I have a handful of little relatives who perform in the parades. And it's so fun to cheer them on as they pass by.

The parade was a part of a larger festival so of course when Jaelyn saw the rides he had to get on a few.

We met up with some cousins and they all got to ride together.

The Hubs had been wanting to try his hand at making these for a while now and he finally got the chance.

I don't know what recipe he used, which is probably good news for those of us trying to lose weight.

But I do know he also made cream cheese frosting with pecans.

Sure was delish.

But I won't be needing another one for a very long time.

{Family Fix} 33rd Annual Heeps Family Picnic

Summer means another fun family picnic.
Usually, the picnic is held in a park. My Uncle would wake up at the peak of dawn to go hold the same set of tables at the park. But this year, the parks dept. changed the rules and you now have to actually make a reservation to hold your spot. So instead of having the picnic at the park we headed over to my Aunt and Uncle's huge back yard.

First picture of the day was of these sweet faces.

Almost impossible to get them all looking at the same time.

My Aunt always comes up with fun games for everyone to play.

{Fun Fix} Out with my Love

This past week the fam and I headed North to BC for our annual Family Picnic. I'll post about that later. While we were there, The Hubs and I decided to getaway for the day, just the 2 of us and go hang out in the city.

Our first stop was Horseshoe Bay.
This little area is north of Vancouver headed towards Whistler.

The surrounding scenery is beautiful. Mountains and water.

He loves that shirt.

Of course while we were down there we had to go to Trolls.

For their delish Fish and Chips.

We shared a 2 piece cod. So gooood.

Can you tell, I was lovin it?

While we were walking around, The Hubs spotted this pizza joint and curiosity took over.

Low Fat Pizza? Does it taste any good?

He ordered up a slice of Hawaiian.

You know I had to take a bite.

It was good, my only complaint is it had a soft bottom crust. I like a little crunch.

When we left Horseshoe Bay, we headed to downtown Vancouver to stroll around.

I really love this city.

It's so vibrant and busy. A real city.

I'm a city girl.

While we were there, we walked into a street festival.

"Carnival Del Sol"

A festival celebrating the Latin cultures and food.

These 2 guys were having a dance off. Really funny.

What a great day out, just the 2 of us. It's rare for us to get away without the kids and not have to worry about getting back to them right away.

{Fun Fix} 4th of July

This year for the 4th of July, the Hubs set up a photo booth at the Freedom Fair on Tacoma's waterfront.
I tell you, this man is always thinking of a way to make a buck. And I can't blame him. It's actually one of the characteristic I really dig about him.
He's never set up shop at a fair before, usually he's at a concert or party of some sort, but this turned out to be a really smart idea. The people were lovin it.

Of course we had to get a couple of flicks too.

Spiderman made an appearance.

This was our first year at the Freedom Fair. It was really nice. Lot's of different booths and vendors. An airshow and of course a firework show, which was awesome.

{Love Fix} Anniversary Dinner

To celebrate for our anniversary the Hubs and I went out for dinner. I had steak on the brain. Not something I usually crave but it was exactly what I wanted last night.

We chose to indulge at Stanley and Seaforts, a seafood and steakhouse.

For a starter we shared their Smoked Chicken Tortellini. So good, I almost forgot to get a picture of it.

Our main meal was a Surf and Turf dinner for two.

A huge lobster tail, crab legs, prawns and a 14oz steak.

It was super duper delish.

Because we were celebrating we got a free Creme Brule.
I've never actually had one before, but now that I have, I don't think it'll be my last.

This dessert was so ridiculous.

I really was better off not knowing how mmm mmmm goood it is.

Would've been nice to have our entire meal for free, but we knew this must have been a mistake.

We showed the waitress, and yup, it was a mistake.

She was only supposed to discount the dessert.

Needless to say we paid just like the good people we are.

Recently, I attended a wedding with The Hubs and my MIL.
I love weddings.
They remind me of my very own and how I felt walking towards my Love moments before becoming his Mrs.

This wedding took place at a beautiful golf course. So of course we had to take advantage of the surroundings and snap a couple pics.

The colors were pink and silver.

Really pretty combination.

The cake was amazing. It not only looked great but it tasted so good.

2 tiers each of red velvet and chocolate-vanilla swirl.

I had a piece of the chocolate-vanilla swirl. Yum.

Personalized M&M's made adorable guest favors.

Congrats to the beautiful couple.

{Food Fix} Award Winning BBQ

On our way to Long Beach, we stopped to eat at Ranch House BBQ in Olympia, WA.
The Hubs has been wanting to check out this place for a few years now. I'm sure I've mentioned before, that anytime we hear about a BBQ joint he has to taste it.
Well this place is well known in the BBQ competition circuit. It has won tons of awards, many of which were grand prize and 1st place. The Hubs has seen it several times on the Food Network.

We knew it was on our way to the beach, but didn't know it was litterally on our way. I mean, it was just off the freeway, didn't even have to go through a light to get there.

We decided to share a bowl of their award winning chili,

And a BBQ sampler plate.

Chicken, brisket, pulled pork and ribs with a corn bread muffin, baked beans and garlic fries.

Award winning??

I will just say, I'm sure we weren't served the same plate given to a judge in a competition.

The sauce was delish, I could definitely taste the smoke flavor in the pulled pork, the ribs were fall off the bone and the chicken was moist all the way through. The chili tasted like any other restaurant style chili. Nothing special. The beans were probably the best on the plate for me. They were sweet with a little tangy kick.
I could've done without the garlic fries. I've had better at the ball park and the fair.

I think The Hubs was more impressed than I was.

Not bad overall, but I've had "not bad" BBQ a thousand times.

{Family Fix} Long Beach, WA

Hello Out There!!
I feel like it's been ages since I've posted and I hate that.

There has been several things keeping me away from getting a chance to post. I've been away from home, ill, busy with the boys and ill some more.

One of the places I've been was Long Beach, WA.

The Hubs and I wanted to take the kiddos on a little getaway so we loaded up the car and took a drive to Long

Beach.

It was a beautiful 2.5 hour drive along the coast of Washington.

We had never been to Long Beach and wasn't sure what to expect. All we knew is that it is a little beach town and that is exactly what we were looking for.

It wasn't warm enough to get in the water, but that didn't stop us from having fun on the beach.

Of course Jaelyn's favorite part of the trip was our bonfire in the sand.
We roasted hot dogs,

And no bonfire is complete without Smores.

The Hubs likes to let the chocolate melt onto the cracker by placing them by the fire.

That was the best smore evaa!!

What a great overnight getaway with the family. It's so nice to just take off for a night and let loose.

{Food Fix} Pork Chop Salad

The Hubs wanted pork chops for dinner. You know the kind, breaded and pan fried. Truthfully, that is the best way to eat them with sweet apple sauce on the side. (Although, he just can't get with the apple sauce and pork chop combo)

Instead of having a fried chop, I decided to bake mine in the oven, lightly seasoned.

And eat it on top of a salad. Turned out to be really good. The only thing missing was the apple sauce and now that I write this, I think next time, I'll just add some apple pieces to the salad.

Yum.

{Fun Fix} Farmers Market

The fam and I took a little stroll through the local farmers market the other day.

I like going to the farmers market for several reasons, but most of all because it inspires me to eat healthy. I feel good about supporting local farmers and I usually walk away with something fresh and yummy.

This market had all your usual suspects, including fresh fruits and veggies, potted plants, handmade goods and big beautiful boquets of flowers.

But there were also some unexpected treats. The stand that surprised me the most was Bacon Forever.

The sun has really been playing shy around here. Just when will she show face? I don't even think Mother Nature knows. So for now, the only thing keeping hope alive is my flowers in my front yard. They are blooming and beautiful.

It's not the best photo when it comes to quality or artistry, but I love it. I'm sure I could've found one that is more creative but this one captures Mr. A perfectly. And isn't that why we take pictures? To capture the truth. The look on Mr's face is so totally him. He always has the "I'm trying to figure you out" look on his face. So this is the one I chose. {Food Fix} Just another Skinny Cow

No, I'm not talking about some skinny chick, I'm talking about Skinny Cow's new candy products.

I recently posted about their Heavenly Crisp candy bar here.

And today I tried the Dreamy Clusters.

A candy treat of chocolate, crisps and caramel.

What's not to love?

You get about 6 in a pack, so it's easy not to over do it and eat too many.

NI isn't bad.
120 Cals
6g fat
3g fiber

Like the Heavenly Crisp, they were pretty good.

I'd definately buy them again to keep on hand for a chocolate bite.

{Food Fix} Skinny Cow escaped the freezer

Skinny Cow makes some of my fave frozen treats. I love their ice cream sandwiches.

So when I found this little candy crisp bar at the store I was surprised. I had no idea they were making candy now too.
You know I had to try it.

Only 110 calories. Not bad when your craving some chocolate and want a sweet treat.

The entire bar is dipped in chocolate, not just topped with it like many other low-cal candy bars.

The wafers inside are crispy
and are sandwiched between creamy chocolate.

I have to say. I'm not surprised at how great it was. I was expecting it to taste great and satisfy my sweet tooth. Which it did.

{Food Fix} Lite Meatball Sub

I had these frozen turkey meatballs in the freezer that needed to be used up so instead of the regular spaghetti I decided to try meatball subs.

First I sauteed them in a touch of EVOO with a chopped up onion and then added some marinara sauce.

I let them cook through and let the sauce reduce a bit.

I used a whole wheat bun that I hollowed out for 2 reason,

cut back on the carbs and cals and

give the meatballs a little well to sit in, so they wouldn't fall out as easily.

Topped with some RF shredded mozza cheese and toasted (open faced) in the oven until the cheese was melted.

With a sandwich this big, the perfect side was a simple salad.

Yum.

I've never had a meatball sub before, but this was really good.

I might just have to add it to the regular dinner rotation.

Just some pics of some eats from around here lately.

I have been eating some of the sweetest most delish fresh pineapples lately. I buy them whole and cut them up myself. So juicey and yum.

This below is a veggie chicken patty, cooked in a pan with some EVOO and topped with LF mozzarella cheese and marinara sauce, stuffed in a ww pita. It was inspired by chicken parm, and turned out really good.

When the Hubs has steak for dinner, I will usually just take a piece and cut it up over a salad. I still get to enjoy the steak but I don't eat the sides he cooks with it, like baked beans, mac&cheese, rice or mashed potatoes.

You know a pita pizza had to make an appearance on the food pic list.

Breaky sandwich made with egg whites, deli ham, a half slice of cheddar and a ww hamburger bun.

Yum!

{Family Fix} Take Me Out To The Ball Game

The Canadian Fam came down for the weekend and yesterday was spent at Safeco Field.

Seattle Mariners vs. New York Yankees

My parents are Yankee fans so they were happy with the 7-1 ass kicking NY put on Seattle.

The game was fun. I didn't pay much attention to the actual game, I really don't have much interest in sports. I just like to go for the social event. (you thought I was gonna say food, didn't you?)

The best part of the day was seeing J and our section on the big screen.

Yup, they got my little guy dancing to "I like to move it, move it. You like to... MOVE IT"

You know the song from the kids movie, Madagascar? J loves the movie and sings that song all the time. So when it came on at the game, of course he got up and busted a move.

And they caught him on the jumbo tron. Our whole section cheered for him. Loved it.

Well, today is Memorial Day, and I have plans to just chill at home.

Laundry, homework, and a trip down memory lane looking at some old photos of my loved ones passed.

{Fitness Fix} Bike Ridin'

The Hubs and I have been trying to find ways to enjoy the out doors, spend some time together and get in some activity. So one way we've been able to do that is hitting the pavement on our bikes. The weather around here hasn't been amazing, but it's been good for bike riding.

Here are a couple of pics from our last ride. We had a few things to pick up from the store, so we left the car behind...

I've really been enjoying our rides. I'm hoping we will be able to make a habit of it.
